Ingredients:

2 large eggs
1 tbsp. Whipped cream
2 small cooked sausage, sliced thin
02.01 flour tortilla, cut into 1 “squares
4.1 c. Cheddar cheese
2 tbsp. chopped vegetables (onions and green or red peppers)
2 tsp. Butter
Cayenne pepper (optional)

Directions:

   1st In a medium bowl, eggs and whipped cream with a whisk until well blended.
   2nd Add cooked sausage, tortillas, cheese and chopped vegetables to the egg mixture and stir until well combined.
   3rd Melt butter in a nonstick pan over medium heat.
   4th Add egg mixture to pan.
   5th As the eggs begin to set, stir the eggs slightly so that the uncooked portion flows downward.
   6th Cook until the eggs are not melted, about 3-5 minutes.
   7th Garnish to taste with cayenne pepper.
