Ingredients

* Penne 300g
    * 500g low-fat milk
    * 3tbsp cornstarch
    * 130g reduced-fat mature cheese, grated
    * A grating of nutmeg (optional)
    * Salt and pepper
    * 200g spinach, washed
    * 50g shelled walnuts, broken into pieces
    * 50g reduced-fat cheese mature (for topping)

Method

   1st Bring bring a pot with plenty of salted water to a boil. Add to cook the noodles until they are soft.
   2nd Heat the milk in a non-stick pan, milk tiny bubbles around the edges. Place the cornstarch in a small bowl and pour the hot milk 5tbsp. Mix together to form a paste then send it to heat up the milk.
   3rd stir over low heat until it begins to thicken the milk. There will be lumpy as it thickens but eventually smooth out. Add the reduced-fat mature cheese to taste, salt, pepper and nutmeg.
   4th In a separate pan, wilt the spinach and then every root of the liquid out.
   5th Strain the pasta, then stir through the cheese. Add the spinach and walnuts and top with the rest of the low-fat cheese.
   6th Place melted under the grill for 5 minutes or until cheese is golden and slightly left.
