Ingredients

For the skewers:

    * 100g sugar peas
    700g closed cup mushrooms *
    * 16 vegetarian tortellini (cooked)
    * 8 Cherry Tomatoes
    * 8 x 15cm wooden skewers

For the marinade:


    * 1 clove garlic, finely chopped
    * 5ml (1 teaspoon) dried herbs
    * 2.5 ml (1/2tsp smoked) paprika
    * 5ml (1 teaspoon) tomato paste
    * 15ml (1 tbsp) balsamic vinegar
    * 90ml (6tbsp) olive oil

Method

   1st Soak skewers in cold water for 1 hour to ensure they do not burn during grilling kebabs.
   2nd Push the vegetables on the skewers in the following order: sugar peas, mushrooms, tortellini, mushrooms, tomatoes, mushrooms, tortellini, mushroom and sweet peas.
   3rd Mix the marinade ingredients together and brush the skewers coat with the marinade.
   4th Soft Cook on grill or under the grill for 3-4 minutes on each side, until the tomato and tortellini are slightly crispy.
   5th Serve with a green salad
