* £ 1 dry red beans
* 2 liters of water
* 1 1 / 2 cups chopped onion
* 1 cup chopped celery
* 4 bay leaves
* 1 cup chopped sweet green peppers
* 3 tablespoons chopped garlic
* 3 tablespoons chopped parsley
* 2 teaspoons dried thyme, crushed
* 1 teaspoon salt
* 1 teaspoon black pepper
1st Pick through beans to remove bad beans; thoroughly.
2nd combine in a 5-liter pot, beans, water, onion, celery and bay leaves. Boil, reduce heat.
3rd Cover over low heat for about 1 1 / 2 hours or until beans are tender.
4th Stir and mash beans against side of pan.
5th Add green pepper, garlic, parsley, thyme, salt and black pepper. Cook, uncovered, stirring over low heat until foamy, about 30 minutes.
6th Remove bay leaves. Serve over hot, cooked brown rice, if desired (not included in Nutrition information).
