1 zucchini, sliced
1 yellow squash, sliced
2.1 red pepper, chopped
2 tomatoes, chopped
4.1 c. fat-free Italian dressing
2 c. brown rice, cooked
4.1 c. Soy parmesan cheese
Non-Stick Cooking Spray


   1st Spray baking dish with non-stick cooking spray.
   2nd Mix vegetables and dressing together in the baking dish.
   3rd Cook vegetables in microwave for 10 minutes, stirring every 2-3 minutes.
   4th Sprinkle Parmesan over the top of the vegetables.
   5th Serve vegetables over rice.
