2 6 oz chicken breast without skin
Jalapeno Jack soy cheese 2 ounces
4.1 c. Bread crumbs
8 oz can tomato sauce
1 1 / 2 tsp. Cumin
1 1 / 2 tsp. Chili powder
1 tsp. Coriander
2 garlic cloves, minced
4.1 c. Onion, finely chopped
2.3 c. Rice, cooked
1st Trim all fat from chicken breasts.
2nd Place chicken in glass casserole.
3rd Sprinkle bread crumbs over the top of the chicken.
4th Cook chicken at 375 degrees Celsius (190 degrees Celsius) for 30 minutes or until meat is no longer pink in the middle.
5th In a small saucepan, combine tomato sauce, cumin, chili powder, coriander, garlic and onion. Simmer over low heat until the meat is prepared, served (about 30 minutes).
6th Remove casserole from the oven and put 1 ounces Jalapeno Jack soy cheese on each piece of chicken. Cook at 375 degrees Celsius (190 degrees Celsius) melted for 3-5 minutes or until the cheese is.
7th Serve chicken and rice with tomato sauce drizzled over the top.
Serving size: 1 chicken breast, 1 / 3 cup rice and 1 / 2 cup sauce
