Ingredients:

6 c. fresh spinach, torn into bite-sized pieces
2.1 c.mandarin oranges
1 c.strawberries, sliced
4 ounces soy blue cheese crumbles
4.1 c. Cashew nuts

Dressing:

3 Tbsp. Red wine vinegar
3 Tbsp. Orange juice
1.5 EL. Canola oil
4.1 tsp. Dry mustard
1.3 tsp. Poppy seed

Directions:

   1st Dressing ingredients together and refrigerate.
   2nd Mix the fruit and spinach together.
   3rd Pour dressing over salad and mix well to coat evenly.
   4th Divide lettuce on 4 plates (about 2 cups each).
   5th Sprinkle cashews and soy blue cheese on top of each salad plate.
