Ingredients:

    * 2 cups peeled and chopped russet potatoes, firmly packed (about 1 pound)
    * 04.01 cup grated or finely chopped onion
    * 1 large egg
    * 6 tablespoons egg substitute
    * 2-3 tablespoons low-sodium Matzo meal (a little less than 1 Matze, processed into fine crumbs)
    * 1 teaspoon salt
    * 2-3 teaspoons canola oil

Preparation:

1st Place the potatoes in a cheesecloth or double thickness of paper towels and wring to extract as much water from the potatoes as possible.
2nd In a medium bowl, stir replace the potatoes, onion, egg, egg, and Matze together flour and salt well.
3rd In a large, heavy bottom, non-stick pan over medium heat, heat until the oil is hot. Make sure to distribute the oil evenly over the bottom of the pan. Place 04/01 Cup (Level Action) of potato mixture into the hot oil, making them pressed 1 / 4 to 1 / 2 inch thick patties. Spray tops with canola cooking spray. Brown on one side, about 3 minutes, turn it and the other side is brown (about 3 minutes).
4th Serve it with hot apple sauce, fat free or light sour cream, chopped onions and green.
