Ingredients:

    * 2 cups thinly sliced sweet potatoes (1 large)
    * 1 cup chopped carrots
    * 1 / 2 cup orange juice
    * 1 teaspoon orange peel, grated
    * 1 teaspoon lemon juice
    * 1 teaspoon cornstarch
    * 1 tablespoon water
    * 2 tablespoons slivered almonds or pecan pieces

Preparation:

1st Boil or steam sweet potatoes and carrots cook whole. As they cook almost done, heat orange juice in the cooking pot.
2nd Add the orange zest and lemon juice.
3rd Dissolve the cornflour in 1 tablespoon water and add orange mixture. Continue to heat, stirring constantly, until thickened.
4th Remove vegetables from pan and serving platter. Drizzle orange sauce and sprinkle nuts on top.
