Ingredients

* 400g can of chopped tomatoes
    * 1 / 2 shallots, finely chopped
    * 1 / 2 green pepper, de-seeded and finely chopped
    * 1 clove garlic
    * 2 tablespoons olive oil
    * 2 tsp red wine vinegar
    * 1 lemon or lime
    * Cucumbers and tomatoes for garnish

Method

   1st In a food processor, blitz the chopped tomatoes, shallots, pepper and garlic. Add the processed oil and red wine vinegar then, until smooth.
   2nd Place the mixture in a bowl and black with salt and freshly ground pepper. Add the juice of the lemon or lime chill thoroughly in the refrigerator for several hours.
   3rd Top soup with diced cucumbers and tomatoes de-seeded and serve with crusty bread.
