Ingredients

* 200g pack of purple broccoli Spears
    * 110g packet couscous lemon and garlic
    * ½ x 250g pack halloumi
    * 1 tablespoon olive oil
    * 1 small red onion
    * 2 tablespoons toasted pine nuts
    * Juice of 1 lime
    * Small handful of fresh mint

Method

   1st Place the broccoli and couscous in a large pan and pour 200 ml boiling water. Bring to a boil, cover and simmer for 2 minutes then turn off heat and leave the rest.
   2nd Preheat the grill to high. Brush the slices with a little oil and grill for 1-2 minutes on each side until golden brown.
   3rd Stir the red onions, pine nuts, lime juice, oil, and the remaining mint into the couscous. Divide between two plates, top with the grilled halloumi cut slices and serve warm.
