Ingredients

* 3 zucchini, sliced diagonally
    * Juice and rind of half a lemon
    * 3tbsp olive oil
    * 1 tablespoon dried thyme
    * 1 large fennel bulb, sliced thin

Method

   1st Heat half the oil and thyme in a large frying pan heat, add the fennel and cook for 2-3 minutes. Remove from pan and set aside.
   2nd Heat the remaining oil and the zucchini over high heat for 2-3 minutes until almost tender.
   3rd Place the fennel in the pan and add the lemon rind and juice.
   4th Salt and freshly ground black pepper and serve.
