* 1 tablespoon olive oil
    * 1 onion, chopped
    * 1 green bell pepper, cored and chopped
    * 1 clove garlic, crushed
    * 10ml/2tsp paprika
    * 175g/6oz long grain rice
    * 400ml/14floz vegetable broth
    * 1 (200g) package Salsa Dip
    * Freshly ground black pepper


   1st Heat the oil in a large non-stick pan, add the onion and bell pepper and sauté over medium heat for 3-4 minutes or until they are soft. Add to cook the crushed garlic, pepper and rice and stir for 30 seconds, until the grains are coated with spices.
   2nd Pour in stock and half the salsa sauce, mix well. Cover and cook for 15 minutes or absorbed by the liquid and the rice is soft. Hot or cold with extra salsa on the side. It tastes great with grilled chicken.
