* 2 tablespoons dark soy sauce
    * 1 tablespoon Chinese cooking wine
    * 1 tbsp clear honey
    * 1 teaspoon vegetable oil
    * 2cm piece ginger, grated
    * 1 clove garlic, crushed
    * ½ teaspoon Chinese 5 Spice
    * 250g (9 oz) shiitake mushrooms


   1st Mix in the first seven ingredients in a large bowl. The mushrooms, and mix well until they are coated in the marinade. Cover and leave to marinate in a cool place for at least 1 hour.
   2nd Drain the marinade into a small pan and simmer until syrupy, 1-2 minutes. Thread the mushrooms on skewers over hot coals or barbecue afterwards Cook grill or under the grill about 10 minutes, turning frequently and brushing with the marinade. Serve hot.
