Ingredients

* 2 x 100g goat cheese rounds
    * 2 teaspoons olive oil
    * 2 large flat mushrooms, stems trimmed
    * 2 slices of bread Bloomer
    * 1 small pink apple or pear
    * 1 stalk celery
    * 2 handfuls arugula or other lettuce leaves
    * Currants 2tsp

Method

   1st Set the grill to high. Cut a thin slice from the top discard any cheese. Place them on a heavy metal, rind-side down.
   2nd Rub a little oil all over each mushroom and put
   3rd Meanwhile, quarter, core and slice the apple or pear and celery finely. Place the plate with the mushrooms on the toast. Add the arugula.
   4th Slide the grilled cheese on top of the mushroom. Spoon the jelly with the salad and drizzle a little more oil if you like.
