Ingredients

* 4leeks, chopped
    * 4 large potatoes, cut into cubes
    * 1 tablespoon vegetable oil
    * 800ml chicken or vegetable broth
    * 300ml cream
    * Pinch of nutmeg

To serve:

    * Croutons
    * Grated nutmeg
    * Parsley, chopped

Method

   1st Sweat leeks and four 4 large potatoes cut into cubes 1 tablespoon chopped vegetable oil for 10 minutes, stirring occasionally, until soft but not browned.
   2nd Add 800ml chicken or vegetable stock, cover and simmer for 15 minutes. Season to taste and allow to cool slightly.
   3rd Mix soup mix. Return to pan, stir 300ml cream and a pinch of grated nutmeg. Reheat gently. Garnish with a swirl of plain yogurt, chopped parsley and a few crunchy croutons.
