* 100g flour
* 1 tablespoon baking powder
* Medium egg
* 150ml milk
* 198g can sweet corn kernels
* Salsa, store-bought or home-made to serve
1st Sift the flour, baking soda and spices in a large bowl. Take a fountain in the middle, add one medium egg and merge gradually into 150ml milk Beat until smooth.
2nd Ensure a certain sugar 198g can corn kernels, pat dry on kitchen paper, then add the batter mix with something else like (see the tip!).
3rd In a pan, add one tablespoon of vegetable oil. Once hot, fry spoonfuls of mixture for about 2 minutes per side until golden brown and crispy on each side.
4th Serve the sweet corn fritters with a salsa or a quick salad of peppers, onions, tomatoes and cucumbers.
