Ingredients

* 1.5 kg (3 pounds) wedge of pumpkin
    * Butter
    * 2 cloves garlic, peeled and crushed
    * 2-4 green onions, sliced and chopped
    * 3tbsp crème fraîche
    * Salt and freshly ground black pepper

Method

   1st Cut the pumpkin into large pieces, then peel and remove the core and seeds. You have a little more than 1kg (2 ¼ lb) of cooked pumpkin. Cut it into smaller pieces and in a pan of boiling water. Cook for 20-25 minutes until soft.
   2nd Drain and let pumpkin in a colander, shaking it a few times.
   3rd Add enter the butter, garlic and white parts of spring onions in the pan and cook for one minute. Then add the crème fraîche and cook for a few minutes, the soft garlic.
   4th Place the pumpkin to the pan and mash well. Season generously and add the chopped green parts of onions. Hot as a side dish to meat or other vegetables. (Not suitable for freezing)
