* 2 zucchini, cut into thick slices
    * 1 red and 1 yellow pepper, cut into thick slices

    * 1 eggplant, chopped

    * 2 tablespoons olive oil

Method

   1st Toss the zucchini, peppers, leeks and eggplant pesto with olive oil and seasoning.
