* 8 medium slices white bread, crusts removed
* 4 medium tomatoes, sliced
* 120g (4 oz) mature Cheddar cheese, grated or mild,
* 300ml (½ pint) milk
* 4 medium eggs
* 2 tablespoons pesto
* Salt and freshly ground black pepper
1st Set the oven to 200 ° C (gas mark 6).
2nd Cut to give the bread slices in half diagonally and arrange them in an ovenproof dish. Place tomato slices between bread. Sprinkle the cheese over the top.
3rd Measure the milk into a jug and add the eggs, pesto and spices. Whisk together they pierce with a fork. Pour the mixture over the bread. Leave for 5-10 minutes, the bread soak up some of the liquid.
4th Place the plate in the middle of the oven and bake for 20-30 minutes, or until the bake is golden in color and feel to the touch set, when pressed lightly in the center. Take it out of the oven and serve immediately. (Not suitable for freezing).
