Ingredients

* 2kg (4 pounds 8oz) potatoes, halved
    * 1 unwaxed lemon
    * 4tbsp vegetable oil
    * 2 tablespoons mild curry paste
    * 2 tablespoons fresh cilantro, chopped
    * 1 tbsp flour
    * Half a head of garlic, cloves into the broken

Method

   1st Preheat the oven to 190 ° C/375 ° F / gas mark 5th Boil the potatoes and whole lemon in boiling water for ten minutes, or until the potatoes are just tender.

   3rd Drain the potatoes, return them to the pan and throw in the spicy marinade. Pierce the lemon and squeeze the juice over the potatoes. Mix the garlic cloves with the potatoes.
   4th Remove the roasting pan from the oven, carefully remove the potatoes and cover them in the hot oil. Roast for 25-30 minutes until golden brown and crispy. Remove from the oven, sprinkle with the remaining coriander and season.
