Ingredients

* 500g boiled potato or pumpkin, slightly crushed or chopped
    * 8 flour tortillas
    * Freshly ground pepper
    * Sea salt
    * 100g creamy blue cheese
    * 200g fresh mozzarella

Method

   1st Place a flour tortilla in a dry non-stick frying pan and lavishly spread with the mashed vegetables to the brim.
   2nd Season with salt and pepper and sprinkle with cheese. Top with another flour tortilla and cook on medium heat until lightly browned, min 3rd
   3rd Turn once and cook the other side until lightly browned and the cheese has melted.
   4th Transfer to a board to keep, and keep warm while you do the others. Halve or quarter them to serve.
