Ingredients

225g (8oz) PastryApples – enable 225g (2lbs enable) apples for a pie for 6 personsTo every 450g (1lb) unpeeled apples:

    * 50g (2oz) soft moist sugar (brown sugar)
    * 1 tablespoon lemon juice
    * 1egg white
    * 1/2tsp lemon peel, finely chopped
    * Powdered sugar
    * Icing (optional)

To serve:


    * Rum and raisin ice cream

Method

   1st Peel, core and slice the apples.
   2nd Place hold in a deep cake pan, but they can with the sugar, adding one small cup upside down in the middle of them.
   3rd Place a border of pastry around the edge of the shell. Cover with pastry and ornament as desired. Bake at 190 º C/375 º F / Gas 5 for 30 minutes.
   4th Remove from the oven. Brush coat the cake with lightly whisked egg white, with some powdered sugar and a few drops of water.
   5th Put the cake back in the oven and bake for 10-15 minutes, making sure that it does not catch or burn, making it very easy to do after the crust frozen.
   6th If with a simple crust, the icing may be omitted.
   7th Serve with two scoops of rum and raisin ice cream
