Ingredients

    * 1 tablespoon olive oil
    * 1 small onion, sliced
    02:01 * 175g (6 oz) pieces pack Quorn
    * 1 tablespoon Madras curry paste
    * 50g (2oz) dried apricots, halved
    * 2 tsp grated coconut
    * Fresh cilantro, for garnish

Method

   1st Heat the oil in a pan and add the onion. Fry for 4-5 minutes, until starting to turn golden. Add the Quorn and cook for 2-3 minutes, stirring occasionally, then stir in the curry paste and 300ml boiling water.
   2nd Stir in the apricots and season with salt and pepper. Simmer gently for 15-20 minutes. Sprinkle on the coconut garnish with cilantro and serve with rice and warm pita bread.
