Ingredients

    * 300ml (10 1/2floz) sunflower oil / olive oil, or a mixture of the two
    * 2 egg yolks
    * 1 teaspoon mustard powder English
    * 1 tablespoon lemon juice or white wine vinegar
    * 3 garlic cloves

Method

   1st Crushed garlic and some salt to a paste.
   2nd Pour the oil into a jug. Put the yolks in a small bowl with the mustard powder and a pinch of salt. Whisk well until thoroughly mixed.
   3rd Add half the oil drop by drop to the egg mixture, whisking well after each addition.
   4th Beat in a few drops of lemon juice or vinegar, then dribble in oil, whisking constantly. Next to go with a little lemon juice and vinegar.
   5th If all the oil has been included on the season. Add more lemon juice or vinegar if necessary.
   6th The garlic, egg yolks, then continue as before, mixing until the mayonnaise is thick. Cover and chill – it will keep for two days in the refrigerator. Delicious with thick fries.
