* 15g butter
    * 2 tablespoons olive oil
    * 1 onion, sliced
    * 2 garlic cloves, finely chopped
    * 3 celery stalks, chopped
    * 1 teaspoon paprika
    * 500g chestnut mushrooms, sliced
    * 150g baby mushrooms
    * 150ml white wine or cider
    * 200g tub crème fraîche
    * 2 tablespoons chopped fresh parsley
    1 tablespoon chopped fresh chives *
    * Salt and freshly ground black pepper


1st Heat the butter and heat oil in a frying pan. Cook the onion, garlic and celery for 3-4 minutes until they are soft. Add the peppers and stir in 1 minute.
2nd Add the mushrooms and bring white wine or cider, to a boil, then reduce the heat and simmer 4-5 minutes.
3rd Stir in the crème fraîche and half the herbs, salt and pepper and heat through. Sprinkle with remaining herbs and serve with tagliatelle.
