Ingredients

    * 300g (12 ounces) leeks, washed and finely chopped
    * 300g (12 oz) potatoes, peeled and sliced
    * 700ml vegetable stock
    * 1 / 2 pint milk
    * Salt and pepper

Method

   1st Fry the potatoes and leeks in a pan until soft but not colored.
   2nd Pour in broth and cook for 20 minutes or until potatoes are tender.
   3rd Blend or mash and press through a sieve.
   4th Return to the pan and stir in the milk. Season and serve.
