* 1 tablespoon olive oil oil1 onion, chopped
    * 2 tablespoons tikka masala paste (add more if you like it extra spicy)
    * 2 cans chickpeas, drained
    * 1 can of chopped tomatoes
    * 2tbps tomato paste
    * 300ml vegetable stock


    * Yogurt
    * Chopped coriander
    * 2 fresh tomatoes, sliced
    * Rice to serve


   1st Warm the olive oil in a large saucepan over medium heat, fry until the onion is soft.
   2nd Add curry paste and add the 1 min. Then ensure peak in the chickpeas and that they are well mixed and coated in curry paste. Cook for 2 minutes, stirring so nothing sticks.
   3rd Add in the tomatoes, tomato paste and stock and stir in thoroughly.
   4th Bring bring the contents of the pan to a boil and reduce to a simmer. Boil for 25 minutes, stirring occasionally.
   5th Top plain yogurt with a few tablespoons, some chopped coriander and a few slices of fresh tomatoes, if you want. With white rice.
