* 1 medium sweet potato
* 350g (12 oz) self-flour sifted
* 2 teaspoons sugar
* 15g (1/2oz), light buttery spread
* 1 tablespoon chopped fresh chives
* 250ml (9 fluid ounces drink) skimmed milk
1st Place potatoes lay on baking sheet, prick with a fork and bake at 190C, 375F, gas 5 are soft for 45 minutes or until it. cool to room temperature.
2nd Peel and mash potato.
3rd Place flour and sugar in a bowl and rub in the light buttery spread.
4th Stir in chives, potatoes and enough low-fat milk drink to mix to a soft dough. Turn dough on a lightly floured work surface and knead gently until smooth.
5th Roll lightly to 2cm thick and cut into 5cm (2 inch) rounds. Place on greased baking sheet to drink and brush tops with a little low-fat milk.
6th Bake in hot oven at 210C, 425F, gas 7 for 15 minutes or until tender.
