* 12 young, tender artichokes or 8 medium artichokes (in season)
* Juice of 1 lemon
* 6 small balls buffalo mozzarella, about 150g (5oz) Whole, chopped
* 4tbsp freshly grated Parmesan
* 4 tbsp good quality dried bread crumbs (See note right)
* 2 eggs, beaten almost
* 1 tablespoon olive oil plus extra for drizzling
* Salt and freshly ground black pepper
1st Preheat the oven to 180 ° C (350 ° F, gas mark 4). To prepare the artichokes: Cut off the stems of artichoke – you need it trimmed right, so you can stand the artichokes in the casserole to a boil. Next, trim about 2cm (1in) the tops of the artichokes, then you are not breaking any tough outer leaves (if necessary, cut the tips of the larger leaves with scissors). Have you added for 30 minutes in a glass or ceramic bowl with cold water soak with lemon juice to ensure (that the artichokes are covered to prevent discoloration).
2nd Drain, then scrape out and discard the fuzzy choke with a teaspoon and remove all the spiky inner leaves – the younger the artichoke, choke the less you have to do. If you are using very large artichokes with tightly packed leaves, you have to soften in boiling water for a few minutes to loosen easily and blanch the leaves. Drain and set aside while you make the filling set.
3rd For the filling: Place the mozzarella, Parmesan, bread crumbs, eggs, and the scant 1 tablespoon olive oil in a bowl. Season with salt and black pepper well. Mix the ingredients well with a folk, and use the filling to stuff the artichokes. Press with a spoon down the filling among the leaves and generously fill the middle of each artichoke.
4th Stand the artichokes in a single layer in a greased casserole or shallow baking sheet with sides, add a little water over it and with a little more oil. Bake in preheated oven cook about 45 minutes, cook the artichokes frequently with any juices in the pan. Keep an eye on them and be careful not too long or they will dry out (require smaller artichokes less cooking time).
5th Serve immediately while still hot.
