* 500g (1lb 2oz), short pastry
* 1 tablespoon vegetable oil
* 1 red onion, chopped
* 100g (4 oz) tomatoes, sliced
* 100g (4 oz) vegetarian Cheddar cheese, grated
* Fresh parsley
* 250ml (9 fl oz) milk
* 3 free-range eggs
* Salt and pepper
1st Pre-oven to 190 º C (375 º F gas mark 5).
2nd Roll out dough and line a 9-inch pie shell. Let stand in refrigerator for 30 minutes.
3rd In the oven for 10 minutes. Then set to one side.
4th Heat the oil in a pan, fry the onions and let cool for 3 mins then leave.
5th Spread the onion over the base of the cover with the sliced tomatoes. With the grated cheese and parsley.
6th Place the milk and eggs in a bowl and beat together. Add a good pinch of salt and pepper. Pour the mixture over the casserole.
7th Bake 30 minutes, until golden and set. Serve with salad or new potatoes.
