* 1 tbsp sunflower oil
* 1 onion, cut into thin slices
* 1 teaspoon curry powder
* 2 tomatoes, chopped
* 1 large sweet potato peeled and cut into large pieces
* 500ml hot vegetable stock
* 350g cauliflower, cut into florets
* 100g sugar snap peas and French beans per crowned
1st Heat the oil in a saucepan over low heat. Add the onions and fry them for about 5 minutes until they are soft. Add the curry powder and are stir fry for 1 minute until you smell it in the location, the distinctive scent of spices.
2nd Stir in the tomatoes, sweet potatoes and stock and bring to a boil. Simmer, covered, for 5 minutes, then the cauliflower. Cook discovered for 5 minutes, then stir in the sugar snap peas and French beans. Simmer for another 5 minutes until the vegetables are soft. Serve with steamed rice and naan bread.
