* 1kg (2 ¼ lb) ripe tomatoes, coarsely chopped
* 1 green bell pepper, cored and coarsely chopped
* 1 onion, chopped
* 2 cloves garlic, crushed
* 3tbsp wild rocket pesto
* Salt and freshly ground pepper
1st First place of the tomato, green pepper, onion and garlic in a large bowl. Add 2 tablespoons of pesto and mix thoroughly.
2nd Let marinate overnight or for at least eight hours to allow flavors to combine and deepen.
3rd The next day, place the tomato mixture in a processor and process until smooth. Season with salt and pepper.
4th Serve in bowls and sprinkle with remaining pesto.
