Ingredients

* 4 large baking potatoes
    * 350g glass cherry tomato sauce with basil and Parmesan
    * 100g (4 ounces) grated cheddar cheese

Method

   1st Four large boiled potatoes cut into wedges and bake bucket from the middle (this for pie toppings, or can keep a side dish).
   2nd Place wedges skin-side down in a roasting pan and drizzle a little oil. Bake for 10 min.
   3rd Pour about a 350g tin 350g tin cherry tomatoes with basil and Parmesan.
   4th Top with 100g (4 ounces) grated cheddar cheese and bake for another 10 minutes, until the oozing.
