For the sauce:
* 2 tablespoons ghee (or vegetable oil)
* 2 onions, finely chopped
* Thumb-sized piece of ginger, finely chopped
* 3 garlic cloves, minced
* 1 teaspoon ground cumin
* 1 tsp ground coriander
* 1 tsp turmeric
* 1 whole green chili
* 1 teaspoon salt
* 400g can of chopped tomatoes
* 1 teaspoon sugar
* 500g fresh spinach, washed
To coat the paneer:
* 2 teaspoons garam masala
* 50g semolina
* 200g paneer, cut into large cubes oxo
* Vegetable oil for shallow frying pan
* Handful of chopped fresh coriander leaves
* 1 teaspoon lemon juice
1st Heat oil in a pan, ghee, then add the onion and fry cook for about 3 minutes.
2nd Add the ginger and garlic and add one more minute. Add the cumin, coriander, turmeric, chili and all the salt. Cook and stir for a minute to infuse all the spices.
3rd Add the chopped tomatoes and sugar and simmer for 10 minutes.
4th give the meantime, in a bowl, combine the garam masala and semolina. In the bowl, place the cubes of paneer and coat.
5th Heat enough oil to cover bottom of a frying pan and fry the paneer crispy and golden.
6th Back to the tomato and spice mixture into the pan, add the spinach and 2 tablespoons water and stir in, cooking until the spinach is wilted. Fold in your crunchy paneer and sprinkle over the coriander and lemon juice.
