* 75g (3 oz dry) spaghetti
* 1 shallot, finely chopped
* 8 cherry tomatoes, chopped
* 2 tablespoons olive oil
* Fresh chives, for garnish
1st Cook the spaghetti according to the package instructions in a large panful of boiling salted water.
2nd Drain the pasta and reserve about 1 tablespoon of the cooking water.
3rd Meanwhile, fry the finely chopped shallot in some butter until it is soft. Add tomatoes and cook the olive oil and short.
4th Mix the tomato salsa and the reserved pasta water. Season with salt and pepper and salsa, spaghetti, mixing.
5th Serve hot, garnished with a pinch of fresh chives.
