* 200g (7 ounces) kale
    * 2cm piece fresh ginger, peeled
    * 4 spring onions, sliced
    * 2 tablespoons peanut oil
    * Half a red chili pepper, seeded and sliced very finely
    * Large clove garlic, peeled and sliced very finely
    * Squeeze of fresh lime (optional)


   1st Put the kale in a large pot, cover with water and bring to a boil. Simmer for 4 minutes.
   2nd Finely chop the ginger and chop the spring onions into 3 cm long, slicing on the diagonal.
   3rd Drain the kale really good, and heat the oil in a large frying pan or wok. Add the chilli, garlic, ginger and spring onions and cook over medium heat for 2 minutes – you can not let the garlic go darker than golden color.
   4th Add the drained kale give to the pan and combine it with the remaining ingredients (except lime).
   5th Cook for about 1 ½ minutes, always raise the Kale to it by heat. Thus, they also take on the flavors of other ingredients.
   6th Season to taste, add a splash of lime juice, fresh and serve immediately.
