* 410g can drained white beans,
    * 4-5tbsp olive
    * 2-3tbsp lemon juice
    * 1 clove garlic, peeled and crushed
    * 2 packs with pak choi, washed and cut in half from tip to root
    * Salt and freshly ground black pepper


   1st Place the beans in a heat 3tbsp with olive oil, lemon juice and garlic. Heat through and lightly mash until the beans begin to break. Add salt and pepper.
   2nd The rest of the olive oil in a wok or frying pan over medium heat. Add the bok choy and stir fry for 2-3 minutes.
   3rd Pile the mashed beans to distribute four plates, add the bok choy and drizzle with a little olive oil and a squeeze of lemon juice.
