Ingredients

* 4tbsp olive oil
    * 1 small onion, sliced
    * 2 medium zucchini, cut into slices
    * 6 eggs, beaten
    * 150g (5 ½ oz) goat cheese
    * 20 g pack chives, finely chopped

Method

   1st Pre-heat the grill to high. Heat 2 tablespoons of the oil in a medium frying pan and fry the onion for 5 minutes. Add the zucchini and add another 5 minutes.
   2nd Stir in the beaten eggs, goat cheese and half the chives cook slowly over low heat for 6-8 minutes.
   3rd Finish on the grill, set up the egg. Turn the frittata to a plate and fly immediately with a chive oil from the remaining oil and chives along with a hand blender.
