Ingredients

* 350g (12 ounces ripe) plums
    * 3tbsp clear honey
    * 1 cinnamon stick
    * 3tbsp water
    * 2 medium eggs
    * 3tbsp low-fat milk
    * 2 slices whole wheat bread (about 125g)
    * 1 tbsp mild olive oil
    * 2 teaspoons powdered sugar

Method

   1st Halve and stone the plums and in a small saucepan with 1 tablespoon of honey, cinnamon stick and water. Cover and heat very gently for soft, about 5 minutes until the plums, but are not disintegrate.
   2nd Beat the remaining honey with the eggs and milk. Put the slices in a single layer on a plate. Pour the egg mixture over the bread and leave for 10 minutes to absorb the state.
   3rd Heat the oil in a large skillet, preferably non-stick. Halve or quarter the bread slices diagonally and add to the pan. Sauté for 1-2 minutes until golden brown on each side.
   4th Drain on plates and sprinkle with the sugar. Serve with the plum compote.
