Ingredients

* 350g (12 ounces) spiral pasta shapes
    * 3tbsp olive oil
    * 2 eggplants, diced
    * 350g can of tomatoes and olive pasta sauce
    * 250g (9 oz) mozzarella cheese, chopped
    * Federation of fresh basil leaves

Method

   1st Cook the noodles according to instructions of the package. Save a good portion of the cooking water, drain the pasta and set aside.
   2nd Heat the oil in a large non-stick pan, add the eggplant and cook over medium heat for 50-10 minutes or until soft.
   3rd Add the pasta sauce and gently warm through. The pasta and the reserved cooking water. Season and stir well, then with the mozzarella. Min Heat through for first Spoon the pasta into bowls and warmed up with fresh basil.
