* 250g (9 oz) Chantenay carrots scraped or peeled if necessary
* Pinch of sugar
* ½ teaspoon cumin
* ½ tsp coriander seeds whole
* 25g (1 oz) unsalted butter
* Salt and freshly ground black pepper
1st Place the carrots in a pot of boiling water, season and add the sugar. Bring back to boiling and boil for 5-7 minutes or until just tender. You can test this with the tip of a sharp knife. Drain and return to the pan.
2nd Put the crushed cumin and coriander seeds in a mortar and easy.
3rd Heat a small frying pan, the butter until melted, throw in cumin and coriander seeds. After about 10 seconds, adjusting the carrots and put the lid back.
4th Shake the pan, until the carrots are coated with the flavored butter.
