Ingredients

* 2 large baking potatoes
    * 75g dolce latte cheese
    * 2 chopped spring onions
    * 1 tablespoon creme fraiche
    * 50g sunblush tomatoes, coarsely chopped
    * 1 clove garlic, crushed
    * 1 tablespoon chopped parsley
    * Salt and pepper

Method

   1st Prick potatoes all over, cook in the microwave for 10 minutes or until soft.
   2nd Slicing and give carefully scoop the inside into a bowl. Add 50g of cheese, spring onions, creme fraiche, season and mix well. Scoop mixture back into potato shells.
   3rd Mix garlic, tomatoes and parsley. Sprinkle the potatoes to remove the remaining cheese and pop under the grill for 1-2 minutes and serve.
