* 100g (4 oz) small shallots, peeled, with roots left intact
* 1 tablespoon olive oil
* 25g (1oz) butter
* 1 tablespoon powdered sugar
* 225g (8oz), Brussels sprouts, trimmed and tops with a deep cut cross
* Salt and freshly ground pepper
1st Heat, heat the oil and butter in a large skillet until foamy, stir the shallots and throw well. Sprinkle with the sugar and stir gently until it dissolved. Reduce heat and cook gently for 8-10 minutes, until the caramelized sugar and the shallots are soft, adding 1-2 tablespoons of water if the caramel begins in the pan, before remaining shallots are cooked.
2nd Meanwhile, salt pan, bring to a boil and add the prepared Brussels sprouts. Cover and cook for 5-7 minutes. drain well and add the caramelized shallots. Season and also connect to coat the sprouts. Serve immediately.
