* 125g (5oz) couscous
* 25g (1oz) toasted flaked almonds
* 125g (5oz) broccoli florets
* 3 tablespoons olive oil
* Large pinch ground cinnamon
* 2 tbsp chopped coriander
* Salt and freshly ground black pepper
1st Place the couscous in a large bowl and pour over 200ml (7 fl OZ) boiling water. Cover and leave for 10 minutes.
2nd Trim and cut the broccoli into small florets and cut the stalks of cut flowers in half; cm thick slices. Heat 1 tbsp olive oil in a pan. When hot, add the broccoli and stir-fry cook for 3-4 minutes.
3rd Stir pierce the olive oil, cinnamon and coriander in the couscous and fluff with a fork. Add the broccoli, almonds and spices. Mix well and serve hot.
Guideline Daily Amount of 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g of salt.
