* 2 corncobs, husks and tassels removed
* 25g (1oz) unsalted butter
* Zest of ½ lime
* 1 teaspoon lime juice
1 tablespoon chopped fresh coriander *
* A pinch of ground dried chili peppers
* Freshly ground black pepper
1st Preheat the grill.
2nd Soften the butter and other ingredients, stir well combined.
3rd Place each sweet corn COB on 2 layers of foil and generously spread the flask containing the herb butter. Roll up ensuring the plots are sealed.
4th Cook the foil parcels on a grill over the hot coals for 12-15 minutes turning occasionally, until corn is tender.
