For the salad:

    * 2 x 150-200g bags of salad leaves
    * 125g (4 oz) Stilton cheese, broken into small pieces
    * 100g packet of walnut pieces

For the dressing:

    * 10tbsp walnut oil
    * 1 tablespoon Dijon-mustard-level
    * 4tbsp apple vinegar
    * Salt and freshly ground black pepper


   1st To shake all the dressing ingredients in a bottle or glass top and good, until they are mixed. The dressing will keep for up to a week if it is kept refrigerated.
   2nd To serve, top of the leaves in a large bowl. Scatter the cheese and walnuts, then drizzle over the dressing over. to throw with salad servers or large spoons to the salad in the dressing room.

Cook’s tip: The best salad leaves keep them in the bags broke in while the cheese can be sold in advance and are intopieces in an insulated container to keep it cool.
