Ingredients

* 2 garlic cloves, minced
    * 2 tablespoons minced ginger
    * 1 / 2 small onion, chopped
    * 1 teaspoon mustard seeds
    * 1 tsp cumin
    throw * Mixed vegetables (whatever you have – with potatoes, cauliflower, peppers, carrots, zucchini and all work well)
    * 1 tomato, chopped

Method

   1st Fry garlic, ginger and onions together for 3-4 minutes. Add mustard seeds and cumin and add the additional 2 minutes.
   2nd Chop the vegetables into bite-sized pieces, add all the tomatoes with pan, add herbs and spices and 3-4 minutes.
   3rd Add some water (the amount depends on how many vegetables you have – about a half cup is average). Cover and turn the heat.
   4th Simmer until the vegetables are done (about 20 minutes). Serve with rice or naan bread.
