Ingredients

* 1.5 kg (3 pounds 5oz) floury potatoes, peeled and diced
    * 2 garlic cloves, smashed
    * 100g (4 oz) butter, plus a little extra for the bulbs
    * 200ml (7 fl oz) double cream
    * 2 ripe pear, cored and diced
    1 tablespoon chopped fresh thyme *

Method

   1st Place the potatoes in a large, lightly salted water pan, add the garlic and bring to a boil. Simmer for 15 minutes until soft. Drain and return to the pan. Warm over very low flame to cook the excess water. Add the butter and cream, heat gently until bubbling. Mash until smooth.
   2nd Meanwhile, cook the pears and thyme in a little butter in a small fry for 5-10 minutes until softened. Stir into the mash and season to taste.
