Ingredients

* 75g (3 oz) butter
    * 2 red onions, finely chopped
    * 1.5 kg (3 pounds 5oz) red cabbage, sliced very finely
    * 300ml (½ pt) Port
    * 4tbsp cranberry sauce
    * 75g pack dried cranberries
    * 2 tbsp light muscovado sugar

Method

   1st Melt the butter in a large heavy-based pan, add the onions and cook gently for 15 minutes until very soft. Stir in remaining ingredients, plus 150ml (¼ pt) water and salt and black pepper.
   2nd Bring to the boil and simmer covered for 1 hour. Cover and cook for another 15 minutes, until all liquid. Check seasoning and serve.
